Chicken Chile Relleno Cheese Dish

First things first, I found this recipe on Pinterest. I borrowed the photo from Buttoni's Low Carb Recipes. And lastly, I changed the name of the dish from Chicken Chile Relleno Casserole to Chicken Chile Relleno Cheese Dish. Long story short, my husband will not eat casseroles. His mom made casseroles all the time, and apparently, they weren't very good ones. Hence, Cheese Dish instead of Casserole. Crazy, but it's true.

Words cannot describe how yummy this dish is! And it's low carb!!!

To make this dish, you have to roast poblano peppers, and I hadn't done that before. It was surprisingly easy! The recipe calls for onions, and I don't do onions, so I left those out. I used more garlic than the recipe called for, and it turned out delicious!!

It has been added to our meal rotation, and we are looking forward to making it again.

PinTested - The Best Fruit Dip Ever

Yesterday, I was co-hostess to a wedding shower.  I keep wanting to call it a bridal shower, but the groom was there too, so that just doesn't sound right. It's kinda funny how the grooms are attending these showers these days. There's no way my husband would've attended our shower, you know...twenty-plus years ago. It wasn't cool!

I was asked to bring fruit, and I was happy to do so but I thought it needed a little something to go with it. Like I needed a reason to get on Pinterest. (Hi, my name is Julie and I am addicted to Pinterest.) I found this little gem of a recipe, tossed it together in a matter of minutes, threw it in the fridge and started getting the fruit ready.

It was a hit! A couple of people even took cupfuls of it home, minus the fruit. One person said that might just be her dinner. Now, I have to make a confession. I never tried it. It smelled good, but it's really not my kind of thing. I like my fruit plain, just sayin'.  When you read this recipe you will see that it makes a pretty good amount. There's 32 oz. of yogurt, 8 oz of cool whip, and a box of vanilla pudding mix.  There's a lot of this goodness, and I came home with about a 1/4 of a cup.  See, a total hit!

Here's where I made my dip a little different, and no one ever noticed. I told you how much I came home with.  I used sugar-free cool whip, sugar-free vanilla pudding mix, and fat-free greek yogurt (Oikos).

Halloween - Good or Evil? (& cute spiders)

First of all, let me just say that the cute little spiders were found on Pinterest and we (Michelle & I) decided to make some of our own. So they were a PinTest. We did ghosts too.

Now, let's get to the nitty gritty about Halloween. My question for you is -

Should Christians celebrate Halloween?

No worries, I am going to give you my opinion on this, but I would like to hear yours as well.

Halloween has always been fun to me. Dressing up as Casper the friendly ghost, Spiderman (yes, I did & I even had a web), Frankenstein (with the coolest paper-mached head ever, thanks mom!), and one year going as my dad.

I don't know the whole story behind Halloween, and I'd rather keep it that way because I don't really care. I do know that kids have been dressing up and trick or treating for years, and there are always more treats than tricks. There are fun costumes and scary costumes, but they are all worn with the purpose of having fun!

I would be willing to bet that the 8-year-old little boy that dressed up like the grim reaper has no idea what that means to us adults. Or what about the same boy wearing the Jason mask?

You know who Jason is right? You do? And you call yourself a Christian? You watch those kinds of movies?

Really, I could care less what kind of movies you watch. You CAN be a Christian and watch those movies because we know that it is purely entertainment. I am not a fan of those kinds of movies, but I do like shows like Criminal Minds, etc and it's about some sick and twisted individuals as well.

What about haunted houses? Love 'em or hate 'em, those are usually the two categories people fall into. I love 'em! I guess I enjoy being scared, as long as they don't grab me. If they grab me, then I go total Ziva on them. How about you?

We all know that the haunted houses aren't real. The same goes for the movies and the costumes we as children or adults wear on Halloween. We are not running around worshipping Satan, committing evil acts, or denying our Lord. We are out there to have fun!

If you know the background of Halloween, and buy into the beliefs behind it, then that is evil. If you don't buy into those beliefs, then by golly, throw on a costume and go get yourself some candy. Halloween is only as evil as you make it.

That's my opinion. What's yours?

Chilly Pepper & Chicken and Dumplings

She got a little chilly and practically buried herself in the blanket.  (I helped pull the over up over her back.)

The weather is getting cooler, and it is time for some great comfort food recipes!  I just happened to try a new recipe for Chicken & Dumplings the other day, and it was Yummy!!! I just have to share it with you!

Slow Cooker Chicken & Dumplings

This was a super duper easy recipe. You'll have to follow the link for the recipe because it isn't mine, but I will tell you how I plan to change it when I make it again.

McD loved the taste, but said it could use more of the soupiness.  He didn't know it was just Cream of Chicken soup, so I plan on adding more of it and maybe chicken broth instead of water. We are also huge fans of all things spicy, so I plan on adding some jalapenos to the crock pot next time as well.

I am getting hungry just thinking about it. Try it, and let me know what you think. It was a winner winner, chicken dinner here at our house.

 

 

Shredding Chicken - PinTest

Several weeks ago, I saw a tip on Pinterest that looked too good to be true. Honestly, the only bad thing about this helpful tip is that you have a few more dishes to wash. That's it.

Jane, from This Week for Dinner, wrote a post about how to shred chicken with your Kitchen Aid mixer. Someone pinned it, and now there are happy cooks all over the place!

I wanted to try a new recipe with shredded chicken, just so I could try this tip, and it worked!  Like a charm!! 

The recipe I tried was the Chicken & Dumpling Casserole. If you haven't tried it, you should!

Chicken & Dumplings - A PinTest

I've been craving Chicken & Dumplings, and I didn't have a recipe for a fast and easy recipe. So, what did I do? I went to Pinterest, of course!

I found this Chicken & Dumpling Casserole recipe from Plain Chicken. (Pinterest) (Website) 

I threw it all together, tossed it in the oven and 37 minutes later we had some of the best Chicken & Dumpling Casserole! 

I recommend using grilled, rotisserie, or seasoned chicken of some kind.  But Steph from Plain Chicken, recommended that in her recipe. I wouldn't change a thing. 

And I will make it again!!

Lazy Cake Cookies - PinTest

I'm a Lazy Mom got this recipe from Lazy Mom Beth, and I found it on Pinterest.

I've been wanting to make a Pecan Pie Cake, but when I looked at the recipe late last night I decided that it was going to have to wait for another time. It was just too time consuming for 9 o'clock at night. I was pooped and ready for bed! I didn't get to bed until almost 11 pm, but who's keeping track. 

I just happened to have all of the ingredients for this Lazy Cake Cookie, and it sounded good. Not to mention, EASY! 

I followed the instructions to a T, (where did that saying come from anyway?), and the only thing that I noticed that was different about my experience was that I had to leave mine in the oven for approximately 23 minutes instead of 20. Another thing I did was to put foil over it those last few minutes so it didn't brown anymore. 

We had a Life Group luncheon at church and I was bringing the dessert. It was a hit! I've now had three pieces, and am leaving the rest for McD. They are very rich, but go wonderfully with a tall glass of milk! They are not great for this girls buttocks (do you hear Forrest Gump say that like I do?), but that is why I am going for a walk. 

It is a gorgeous day, get out there and enjoy what the good Lord created! 

Apples in a Bag - PinTest

In one word - Yummy!

Seriously!

The other night I decided to just give this a try. I made two servings in one bag instead of just one, and I didn't peel my apples because I was being lazy. I wanted something sweet, and I wanted it right then. Four minutes later, I had a great dessert. One of the best things about this dessert was the fact that it was only 59 calories per serving.

Next time, yes there will be a next time, I will probably just put everything in a bowl and cover it with a small area open to let steam escape. I'm not sure I want to use the bag again.

If you are like me, and would rather eat the apples out of an apple pie, then this recipe is made just for you. 

Gumball Necklace for Valentine's Day - PinTest

A couple of years ago I made a gumball necklace for our youngest granddaughter. I loved this idea as soon as I saw it, and had to make it!

It is pinned here on Pinterest. 

One Charming Party is where I found this way back when, but I made sure to pin it today so you could find it with no problem.
